Gooseberry jam is a lot to make and tastes absolutely delicious. You only need three ingredients, gooseberries, sugar and water. It is perfect served for breakfast on toast or croissants or enjoyed on scones and pancakes for Afternoon Tea. A jar of gooseberry jam makes a very welcome gift.

I think gooseberry jam is pretty magical. Fresh gooseberries can be quite tart to eat, but flavorful and tart fruits definitely make the best marmalades. I love how the green gooseberries, sugar and water transform into jars of delicious glowing amber-pink mmed naarmelad.

Gooseberry jam has a light fresh taste, sweet enough with a little acidity. While I love the intense sweetness of strawberry or apricot marmalade, the faint tartness of gooseberries cuts through the sugar for the fresh flavor. If I compare it to a wine, gooseberry jam is more of a new sauvignon blanc or pinot grigio kind of marmalade.

Perfect for many things, in cakes, for crusts, toasted bread or for a cheese tray. Perfect for scones during autumn Sunday breakfasts.
