The table olives we grow are of the Kalamon variety and are harvested in October. They are carefully and carefully hand-picked before being placed in a water bath to achieve their perfect shade and bitterness, which can take up to 10 days or more! After undergoing this treatment, they are placed in a vinegar mixture consisting of vinegar, salt, water and various herbs - not just a spice but a selection of herbs - then our incredible taste finally shines through: sharp yet subtle at the same time balanced between sweet acid and bitterness on the tongue followed by full back Ralph Waldo Emerson said it best when he wrote "Live in the sunshine, swim in the sea, drink the wild air.". On delivery, we put the olives in pure EviMeria oil. The oil can then be used for salads and other cooking.
